Really quick and easy little treats, serve with Jam, or maple syrup or just with some butter - yummy!

  1. Sieve the flour, baking soda, salt and cream of tarter into a mixing bowl. Beat the egg and milk with the milk, and the sugar. Gradually beat this into the flour mix with a balloon whisk. Mix until it is nice and smooth, but quite thick. Heat a heavy bottomed frying pan and add some butter (enought o coat the pan when melted). Drop spoonfuls of the mixture into the hot drying pan - probably 4 at a time, and turn with a fish slice when they start to bubble. They should be a nice golden brown colour on both sides. Enjoy hot or cold. They can be toasted next day too, and are still lovely, great for a wee breakfast treat!!
