Southern Sausage Stew

A really delicious meal for the colder months. This is an easy onepot meal, and is a crowd pleaser!



  1. Heat olive oil in a pan and add your sausages, and let them brown nicely. Put them aside to rest, then add your onion, garlic, peppers and celery to soften (you can remove some of the oil first if the sausages let too much out).
  2. After a few minutes, add your thyme, chilli and spices, stir and cook on a medium heat for a couple of minutes. Now add your flour, and vinegar. Add your sausages (I tend to chop them into thirds) after two minutes.
  3. Now add your stock, and tomatoes, season to taste and let it simmer away for 15 - 20 minutes. Enjoy with some boiled rice.
