This is very tasty variation on carbonara. Getting good Italian sausages is a must. These should be available in a good supermarket.

This is very tasty variation on carbonara. Getting good Italian sausages is a must. These should be available in a good supermarket.

  1. Cut open the sausages and discard the skins. Roll the sausage into marble sized balls.
  2. In a large deep frying pan heat the olive oil and add the meatballs and brown all over, then add the Panetta and carry on cooking until everything is golden..
  3. Meanwhile bring a separate pot of lightly salted water to the boil add your linguine and follow the instructions on the linguine packet.
  4. In a large bowl whip the eggs, half the parmesan, cream, lemon zest, parsley and salt & pepper.
  5. Once the past is cooked, drain it and quickly add the egg mixture stirring in the pan. Then add the meatballs and Panetta. As long as you mix everything quickly and vigorously your sauce will remain smooth and not turn into scrambled eggs. Sprinkle over the parmesan, a little extra virgin olive oil and garnish with any left over parsley. Serve immediately.
