Rock cakes

Lovely wee cakes that are totally foolproof and great to snack on.

Instructions

  1. Preheat the oven to 200c, grease your baking tray / line with greaseproff paper.
  2. Add flour and baking powder to a large bowl add margarine and rub in with your fingertips until the mix resembles breadcrumbs. Stir in the sugar, fruit and then add the egg and 1 tbsp of milk. Mix until the the mixture is quite stiff. Add more milk now if it's too dry.
  3. Use 2 tsps to scoop out little rocks onto your baking tray, leave plenty of space for growth. Sprinkle with sugar, then bake for about 15 mins, until nice and golden.
