Perfect Roast potatoes

Roast potatoes are a great treat with any roast dinner. I have made these with goose fat, chicken fat and duck fat - all delicious. But if you want to go for the more healthy option, just use a good drixxle of olive oil.



  1. Preheat your oven to 220c, if you are cooking a roast, just keep at correct temp for meat, but place potatoes on top shelf - if much lower than 220, you may need to increase your cooking time. Peel your potatoes and chop into even sized chunks, golf ball sized is fine.
  2. Place potatoes in a pan with water to cover, and salt. Bring to the boil, and part boil for 10 minutes.
  3. Drain, and place on a hot baking tray, use a spoon to add your goose fat / oil, and ensure the potatoes are covered evenly. Sprinkle with salt and pepper and some fresh rosemary leaves if you wish. Cook in the oven for approx 45 minutes, until crispy and golden.
