A delicious summer treat - can be served hot or cold. If you are lucky enough to have Rhubarb in your garden, do try this, it's gorgeous, and practically free!

  1. Preheat the oven to 180c. Prepare the rhubarb as above, place on a baking tray, sprinkle with a tbsp. of sugar and some water. Bake in the oven for about 15 mins. Once done, remove from the oven set aside to cool and drain excess water.
  2. Grease and line a round cake tin. Then cream the butter and sugar in a large mixing bowl, gradually beating in the eggs until light and fluffy. Fold in the flour, and orange rind. Then, pour the mixture into the tin, and spread the prepared rhubarb over the top.
  3. Now to make the crumble topping - rub together the butter & flour until you have something that looks like fine breadcrumbs, then stir in the sugar & cinnamon. Spread the crumble over the top of the rhubarb.
  4. Now bake in the oven for about 50 minutes, until the crumble is starting to brown.
  5. You can serve this hot with custard or cream, or cold with a cuppa!
