This is a much cheaper, delicious alternative to a takeaway. Quicker than phoning and waiting, cheaper and undoubtably healthier. We use quorn, and or seasonal vegetables.

Quick Quorn curry

This is a much cheaper, delicious alternative to a takeaway. Quicker than phoning and waiting, cheaper and undoubtably healthier. You can also do this with chicken, lamb, beef etc. We often use quorn too, and or seasonal vegetables.

Instructions

  1. Heat oil in a pan or wok. Add onion, garlic and ginger and fry for a few minutes.
  2. Add the paste and fry gently for a couple of minutes, add the coconut milk and spinach and heat through for 10 mins. Add prawns and cook for 2 mins if already cooked (not too long or they will go rubbery), 5 mins if raw, they will turn pink when cooked through. Enjoy with some naan bread and boiled rice. Sprinkle with fresh coriander if you have it. Deeelicious and soo easy!
