Quick and easy Crab and Sweetcorn soup

This recipe is really simple, a delicious thick broth for any day of the week.

  1. Heat 1 litre of water in a pot, and bring to a simmer over a medium heat. Add the drained crab, creamed corn (if you have it) and sweetcorn - remember to double qty if you can't get creamed corn, adding any juice from the corn tns for extra flavour. Stir well, and cook for 5-10 mins on a medium heat.
  2. Now add the beaten eggs, and use a fork to mix them around, season with the soy sauce, a little pinch of salt and a generous pinch of pepper. Now stir in the cornflour, water mixture and stir until the soup has thickened nicely.
  3. Taste and add extra seasoning if necessary, adding more soy sauce too if you like, now add the sesame oil and spring onion. Dish up straight away. Lovely.
