Prawns, chorizo, chilli and lemon

  1. Cook the sliced chorizo, in a frying pan on a medium heat for 3-4 minutes until crisp and the oil is released from the chorizo. Discard most of the oil now, add a dash of fresh olive oil, and the garlic,cook for a few mins until the garlic is soft, careful not to burn!
  2. Turn up the heat, adding the prawns and chilli flakes, stir well and add the lemon juice, cook and stir for another minute until the prawns are cooked through. Sprinkle with the lemon zest and parsley, serve straight away with some crusty bread!!
