Quick, simple and enjoyed by all. Nice the day after with custard.

  1. Grease and line an 8 inch cake tin. Preheat oven to 190c. In a large bowl mix all ingredients together except pineapple. When the mixture is smooth, fold in crushed pineapple. Spoon mixture into cake tin. Bake for 35/40 minutes or until cake tester comes out clean. Once cool you can brush the top of the cake with warmed apricot jam.
