Happy pancake day! Traditional thin crepe like pancakes. Best served with sugar and lemon.

  1. Sift the flour and salt into a mixing bowl. Make a well in the centre, and break in eggs. Whisk the eggs into he flour.
  2. Gradually add the milk and water mixture, whisking as you do, making sure you crape in the flour from the sides of the bowl as you go. Whisk well until smooth. Add about 2 tbsp of the melted butter, and whisk, keep back the remaining butter for the frying pan.
  3. Make sure your frying pan is really hot, then take into medium, adding some butter or oil, when hot add some of the pancake batter - about 2tbsps per pancake, depending on the size of the pan. Turn the pancake when bubbles appear all over the top. Good fun to fling them if you can... Serve with sugar and lemon, or whatever your favourite topping is.
