So simple a dish that it doesn't require anything else.

Instructions

  1. Make the salsa by dicing the beetroot into 5mm pieces. Mix it into the bowl with the spring onions, chilli, mint, olive oil and lemon juice. Season to taste.
  2. Put a light flour in a clean polythene bag and put in the fish. Shake way to cover the fish.
  3. Melt some butter and oil in a large frying pan. Fry the fish for about four to five minutes on each side until the fish flakes easily. Serve just with the salsa.
