Oaty Banana and Nutella Muffins

These deliciously perfect muffins are a tasty and relatively healthy wee snack or pudding! We had them warm from the oven and they really were gorgeous! I made them with the kids whilst their dinner cooled, and popped them in the oven whilst we ate, so really quick and easy too. The recipe uses ripe bananas, so a great way to use any that need eaten. Enjoy!

These deliciously perfect muffins are a tasty and relatively healthy wee snack or pudding! We had them warm from the oven and they really were gorgeous! I made them with the kids whilst their dinner cooled, and popped them in the oven whilst we ate, so really quick and easy too. The recipe uses ripe bananas, so a great way to use any that need eaten. Enjoy!

  1. Preheat the oven to 180c. Mix together the flour, oats, sugar, baking powder and bicarbonate of soda.
  2. In a separate bowl, mash your banana with a fork, then mix in the buttermilk and eggs, and add the melted butter.. Fold the banana mix into the flour etc, try to do this lightly to keep the air.
  3. Spoon about half of the mix into the muffin cases, the spoon a little nutella into the middle, then top the muffins with the remaining mixture. Bake for approx 20 mins, until golden and springy to touch! These freeze well and so are great to stash away for later.

    Very easy to make with assistance from my soon to be 3 year old. The whole family enjoyed a fairly healthy snack. Was definately enjoyed served warm :-)
