This is a recipe shared with me by my friend Jose – great cook, and great taste. The great thing about this is that you can vary the ingredients to suit your taste. I am being a bit conservative on the spice – so add extra if you like it hot!

  1. Make a marinade from the rice wine, chilli paste and 5 spice and cover the chicken in this for 3+ hours
  2. Fry the onions, then throw in the marinated chicken - including any excess marinade. Add the sugar to take some of the bitterness out and to give it a glazed look.
  3. Throw in the chilli (if you like it spicy, then have more chilli than the chicken) it's not essential to eat the chilli, they're for the flavour.
  4. Stir it up, throw in the cashews towards the end and finish with spring onions as a kind of garnish. Serve with some boiled rice - delish!
