Tomato, apple and a wee bit of spice, a lovely combination and a favourite with the family. It sounds a funny old mix of ingredients, but it really works!

  1. First of all, preheat your oven to 180c. Next coat the chicken pieces with the seasoned flour, then add to the hot oil in your pan. Cook gently for a few minutes on each side, until sealed. Then place in an oven proof dish, with a lid.
  2. Now fry the onion in a little oil, add the tomato puree (or 2-3 fresh tomatoes sliced thinly) and after couple of minutes add the curry powder. Now stir in any leftover flour, and add half of the stock, stirring continuousyly until everything has mixed properly.
  3. Add the apple, carrot, lemon, sultanas and bay leaf and sugar now, and then the rest of the stock. Season with some salt and pepper, and goive it all a good stir. Now pour the sauce over the chicken and cook it in the preheated oven for about 30 mins.
