Mussels in white wine and cream is such a simple, classic dish. It is incredibly easy to make and always looks fabulous. Tuck in with some crusty bread to soak up the lovely sauce.

Mussels in white wine and cream is such a simple, classic dish. It is incredibly easy to make and always looks fabulous. Tuck in with some crusty bread to soak up the lovely sauce.

  1. Clean the mussels, our children like helping with this bit! Scrub them under cool, running water. Pull away and discard the beards (the beards are the stringy threads). Make sure you discard any that are cracked, or that don't close tightly when tapped or pressed shut. If you are not sure i would say bin it, better to be over cautious I reckon. :)
  2. Gently fry your onion and garlic in the olive oil, until they are soft, not browned. Add the wine and turn up the heat, once it starts to boil, turn the heat down. Add the cleaned mussels and thyme then cover with the lid and cook gently for 4-5 mins.
  3. The mussels will steam, you can check they are cooked as they will open up, discard any that don't open. Add the cream, and cook for another minute, sprinkle with parsley and serve up immediately. We tend to plonk it in the middle of the table for sharing with a nice crusty loaf. :)
