A really quick and healthy accompaniment to any meal, delicious with the homemade pittas.

  1. Using a blender, chop the mint leaves and chilli, put into a bowl with the couscous and water, give it a quick stir up, cover and leave for 10 mins. Uncover after 10 mins, fluff with a fork and serve. Delicious with a bit of feta cheese crumbled in.
