A delicious family favourite !
Ingredients
- 200 grams Dried White Beans
- 2 Potatoes
- 2 Carrot
- 1 Celery
- 1 Onion finely chopped
- 1 Garlic Glove finely chopped
- 4 tbsp Olive Oil
- 2 Courgettes small
- 2 Tomatoes small
- 150 grams Peas
- 125 grams Pearl Barley
- 125 grams Bacon smoked and cut in strips
- 50 grams Parmesan grated
- 1 tbsp Basil finely chopped
- pinch Salt
- Pepper freshly ground
Instructions
- Soak the beans overnight . Wash, trim and peel the potatoes , carrots and celery, then cut into small dice. Heat the olive oil in a large soup kettle and fry the onion and garlic until translucent. Add the diced vegetables to the pot and brown briefly. Pour the soaking water off the beans. Add the beans and 2 litres of water to the kettle, cover and simmer on low heat for 1 hour. Thinly slice the courgettes. Peel and quarter the tomatoes, remove the seeds, and dice. Add the courgettes, tomatoes, peas, pearl barley and bacon (if using) to the soup. Season with salt and pepper and cook for an additional 20 to 25 minutes, stirring occasionally. Prior to serving sprinkle on Parmesan and basil.
