A really easy, quick and wholesome soup, you can adapt the vegetables depending on what is in season. This is one for the frugal chef as it is very filling and satisfying, but also very cheap.

  1. Heat the oil in a pan, and gently fry the onion and garlic after a minute, add the bacon and let it brown slightly. Approx 3 mins.
  2. Now add your chopped vegetables and let them fry for approx 5 mins.
  3. Now add the tinned tomatoes, stock, bay leaf, stir well. Then add the spaghetti. This should cook for approx 10-15 minutes. Add the shredded cabbage for the last 5 minutes of cooking. Season to taste, then serve with some parmesan to grate in, and some nice crusty bread.
