My children love this dish. Easy and very quick to make you can't really fail with this one.
Ingredients
- 2 tbsp Olive Oil
- 1 Bunch Of Spring Onions chopped
- 1 Garlic Clove crushed
- 1 Red Pepper sliced
- 1 Yellow Pepper sliced
- 1 Green Pepper sliced
- 2 tbsp Dry White Wine
- 400g Tin Of Chopped Tomatoes
- 2 Sun Dried Tomatoes chopped
- 1 tbsp Sun Dried Tomato Oil
- 1 tsp Clear Honey
- 350 grams Spaghettini
Instructions
- Heat the oil in the saucepan and fry the spring onions and garlic for 2 minutes. Add the peppers and cook for a further 2 minutes. Add the wine, canned tomatoes and sun dried tomatoes, tomato oil, honey and a little salt. Bring to boil then reduce heat and simmer for 20 minutes until pulpy and the peppers are tender. Meanwhile cook the spaghettini. Once cooked return to saucepan and then add the sauce and serve.
