Meatballs in Peanut Butter & Chilli Sauce

This is delicious, not too hot unless you add additional chillies. Great for kids and any Mexican themed get together. The Mexican ingredients are now widely available and can be found in most large supermarkets. Top tip here is to get all your ingredients prepared and to overlap the cooking of the sauce and the meatballs.



  1. For the sauce - fry the onions and garlic in the butter until softened. Add tomatoes, chicken stock, chipotle chillies and some abodo sauce. Then simmer for 20 minutes stirring occasionally, towards the end stir in the peanut butter then blend with a hand blender.
  2. Metballs - mix all the ingredients in a bowl using your hands and then roll into small bite size balls. Place these balls on a greased baking sheet and put into a pre heated oven at 200oC for 15 minutes. To ensure they are cooked through turn every 5 minutes. Then place them in a casserole dish, pour over the peanut butter and chilli sauce and then bake for a further 15 minutes
  3. Serve with boiled rice and garnish with chopped corriander leavres, some roasted peanuts and a little sour cream
