This is a recent discovery and has become one of my favourite things! It is just gorgeous and goes well with any roast.

This is a recent discovery and has become one of my favourite things! It is just gorgeous and goes well with any roast.

Instructions

  1. Using a thick bottomed pan, heat your olive on a high heat, add your celeriac, garlic, thyme, salt and pepper, stir well and cook for about 5 mins.
  2. Turn down to a simmer, add the stock, cover with lid and cook for about 25 mins, until tender. Season, then roughly mash. Serve and enjoy!
