  1. Preheat the oven to 220c, meanwhile heat the oil in a frying pan and fry the onion for a few minutes, until soft, add the garlic, cumin, coriander, cinnamon, paprika, and tomato puree and fry for an further 2-3 mins. Now add the vinegar, tomatoes, maple syrup and about 250ml of water and cook for 20-30 mins.
  2. Score the pork, and run generously with the salt and pepper. Heat a large frying pan and fry to seal - about 4-5 mins each side.
  3. Place the pork in an oven proof dish, cover with the sauce and cook for 30 mins on heat of 220c, then lower heat to 150c, and cook for about 3 1/2 hours. The pork will be delicious and moist and falling apart when ready. Enjoy!
