  1. Place couscous into a large bowl with 2 and a half tablespoons of oil, cumin, pinch of salt plus 1/2 of the lemon zest and juice.
  2. Pour 300ml of boiling water over the couscous. Stir well. Then cover with cling film and leave for 10 minutes.
  3. Blanch the broccoli for 3 minutes in boiling salted water. Then drain and rinse under cold water.
  4. Take the skins of each mackerel fillet and chop into pieces. Add to the couscous with the nuts. apricots, broccoli, seeds and dill, and flake it through.
  5. Dress with the lemon juice and extra oil
