Mackerel, pea and pesto jacket potatoes

This is very easy to prepare, filling and very tasty.

  1. Preheat the oven to 200c, gas mark 6. Now prick the potatoes and cook for about an hour until tender, or microwave for 8-10 mins.
  2. Meanwhile, cook the peas in boiling water for 2 mins, then add the chopped spring onions and drain immediately.
  3. Halve the jacket potatoes, and scoop out the potato, leaving a 5mm thick shell. Mash together the potato, soft cheese and pesto. Gently stir in the peas,minions and mackerel.
  4. Now spoon the filling back into the potato skins and serve immediately.
