Lu and Em's Sizzling Seabass

A favourite, as it is soo quick and easy. A one pan wonder!



  1. Slash the skin of the fish and then season with salt and pepper. Heat 1 tbsp of oil in a heavy-based frying pan. Once hot, fry the fish, skin-side down, for 5 mins or until the skin is crisp. Turn over, cook for about a minute, then transfer to a serving plate and keep warm. You'll probably have to fry the fish in 2 batches
  2. Give the pan a little wipe with kitchen roll, then heat the remaining oil, fry the ginger, garlic and chillies for 2 mins until golden, careful not to burn. Take off the heat and toss in the spring onions. Splash the fish with a little soy sauce and spoon over the contents of the pan. Serve with some boiled rice, and a sprig of coriander if you have it.
