A little bit soft in the middle, but crispy on the outside…. Just like a cookie should be! I use low fat spread to make them a bit healthier… Yoû could use whole meal flour, or rice flour to be extra healthy.

A little bit soft in the middle, but crispy on the outside.... Just like a cookie should be! I use low fat spread to make them a bit healthier...

  1. Preheat your oven to 180c. Mix the low fat spread and sugar together until paste like. Add the honey, and any additional extras, like chocolate chips, stir well, then add the flour and mix well.
  2. Arrange into blobs on a lined baking tray, you should get 12 put of your mix, but make sure you leave lots of space between them as they will spread! I tend to do mine in batches. Bake for approx 10-12 mins and let cool on a wire rack. These are so easy and so yummy, enjoy!

    Tried these tonight with a handful of porridge oats too, really nice. I think you could adapt these for any ingredient really… It would be nice to hear of any particular favourites. :)

    These are yummy and lethal to the waist line already eaten 2 and the aren’t long out the oven. I adapted them slightly to suit my intolrances and used brown rice flour instead of flour.
