A good recipe for when you've not got many ingredients in the house. This one is very tasty and veggie.

  1. Cover the lentils in boiling water and soak for one hour and then drain. Melt hte butter in a saucepan and then add vegetables and fry for just 5 minutes. Stir all the time to make sure they are golden not burnt. Add the lentils and stock. Season and add the bouquet garni sachet. Bring to boil and then reduce the heat. Cover and let simmer for 20 minutes until the vegetables are just tender and the lentils have absorbed the liquid. The finished dish should be quite dry. Take out the bouque garni sachet. Serve with chopped parsley alongside lots of crusty bread.
