  1. First of all, cook the noodles are per instructions. Next, heat the oil in a wok, add the duck meat and cook on a high heat for a few mins. Add the cucumber and spring onions and stir fry for a further 2-3 mins, then add the hoisin sauce.
  2. drain the noodles, reserving a little of the water, add to the wok and stir everything well, add the soy sauce before serving.
