Yummy, easy, mid week pasta dish! A hit with all the family!!



  1. Heat the oven to 200C, heat oil and cook leeks until soft (6-8 mins), set aside. Fry chopped bacon until crispy, set aside. Meanwhile, cook the macaroni for 5 -6 mins, and drain. Melt butter in a saucepan, stir in flour and cook 1-2 mins. over a low heat gradually stir in the milk. Stir continuously until smooth and thickened. Stir in the mustard and half the cheese, season to taste. Add leeks and bacon to the macaron, stir well. Pour over the sauce then toss together to coat. Transfer to an oven proof dish. Mix the remaining cheese and breadcrumbs, season with black pepper and scatter over the macaroni. Bake for 20 mins, until golden and bubbling around the edges. Enjoy!!
