Jenny’s never fail, easy Meringues!

I had never made meringues until today, my friend Jenny said she had this easy recipe that always works and turns out she was so right! These are lovely, a wee bit chewy in the middle and totally light and lovely on the outside! Enjoy!!

I had never made meringues until today, my friend Jenny said she had this easy recipe that always works and turns out she was so right! These are lovely, a wee bit chewy in the middle and totally light and lovely on the outside! Enjoy!!

  1. Preheat the oven to 160c, mix all ingredients in a bowl, then whisk gently with an egg beater, either by hand or in a mixing machine... Don't overbeat though. Keep this up until you can make stuff peaks with the mix, then you are ready to go! You can either do one big meringue which will take up to an hour, or you can make several some ones, these would take 30-40 mins. Keep the heat low, especially in a fan assisted oven and keep an eye on them so they don't brown too much. .
  2. Spoon the mix into a lined baking tray to cook, and cook as above. Allow to cool before you eat them. They will keep in an airtight container for a couple of weeks, keep in a cool place, separated with baking parchment and not in the fridge.
