  1. Soak kidney beans for 24 hours in cold water. Then drain the beans and place in a pan with the spring onion, thyme, garlic, all spice berries and scotch bonnet. Pour on 1 litre of boiling water, cover the pan and bring to boil. Then simmer until beans are soft.
  2. Once beans are soft discard all other ingredients in the pan ( except beans). Pour cooking juice into a jug, leaving beans in the pan. Return 500ml of hot liquid into the pan with the beans.
  3. Add coconut milk into the pan and bring to boil. Then turn down to simmer, add the rice and a pinch of salt. Cook until the rice is soft.
  4. Once cooked leave to rest for 10 mins with the pan lid in place. Mix up with a fork and serve with jerk chicken or fish.
