A delicious and hearty octopus stew, slow cooks so the octopus is lovely and tender.

  1. Place the prepared and cleaned octopus in a pot and cover with water, add salt and pepper and a splash of wine, bring to he boil and boil for about 15 mins. Remove the octopus, reserving the water -you can use it to boil the potatoes.
  2. Once the octopus is cool, chop it into bite size pieces. Now gently fry the onion, garlic, fennel - you can add a chopped chilli if you wish to give it a little kick, soften in a little olive oil. Now add the octopus, tomatoes, anchovies, olives, bay leaves, stock, parsley and remaining white wine and a wee bit of olive oil. Let this simmer away gently for about 40 mins until the octopus is nice and tender. Boil your potatoes with a few minutes to spare, they will take about 10 mins, once done add them to your pot.
  3. Add salt and pepper to taste and serve with some nice crusty bread - delicious!
