This is a quick and easy way to make a sweet shortcrust pastry for mince pies, jam tarts and other tasty treats. You can make this and keep it in the fridge for a couple of days, or freeze it until you need it.

  1. Sift the flour into a large mixing bowl, add the sugar and salt, then run in the butter with fingertips. Rub together and pull the mix together, adding the very cold water and then kneading into a firm dough, the mix will be a little bit crumbly, but it should stick together. Cover with cling film and set aside in fridge or somewhere cold for about 20 minutes to chill. Give the dough another knead before rolling out and cutting into the appropriate size.
