Easy peasy thai coconut soup

This is a very tasty soup to make that takes no effort at all yet you gets lots of credit for it

Ingredients

  • 4 medium sized Sweet Spuds
  • 1 tin of Coconut Milk
  • 2 spoons of Red Thai Paste Can add more or less depending how strong you like it
  • half a pint Veg Or Meat Stock add more or less depending how thick you like it

Instructions

  1. Bake the spuds in the oven with their skins on until soft in the middle. Once cooked let them cool. When cool take the skins off the spuds and place them in a pan or slow cooker. Add cocunut milk, stock and thai sauce. Bring it to the boil and let simmer for 20 minutes, if in a pan. This will take longer in a slow cooker. Then blend and serve. Frezzes very well.
