Easy peasy gammon and egg noodle soup

This is a great way to use up leftovers too, sub in ham from the fridge, or leftover roast ham – really tasty, quite spicy if you follow the quantities, so just adapt to taste :)
This would also work really well with salmon, or prawns

This is a great way to use up leftovers too, sub in ham from the fridge, or leftover roast ham - really tasty, quite spicy if you follow the quantities, so just adapt to taste :) This would also work really well with salmon, or prawns

  1. Cook the eggs in a small pan of water, until just hard boiled - about 7 mins - set aside and allow to cool in cold water
  2. Now pour the stock into a large soup pot, stir in the curry paste and soy sauce. Add the gammon / ham, pak chi, bean sprouts, and noodles, bring to the boil and simmer for 3-5 mins, until the noodles are cooked.
  3. Divide into 4 bowls, easiest with some tongs :) now peel and half the eggs, and add the egg halves to the bowls, also add the spring onions and chilli. Ladle over the rest of the broth, sprinkle with the coriander and a squeeze of lime - delicious!!!
