Chicken Noodle Soup – Feel good soup
This is a feel good soup, especially for these winter months. A bowl or two of this will sort you right out. My little boy calls it ‘feel me better soup’.
Chicken Noodle Soup

This is a feel good soup, especially for these winter months. A bowl or two of this will sort you right out. My little boy calls it 'feel me better soup'. :)
Ingredients
- 2 whole Chicken Thighs
- 2 whole Chicken Drumsticks
- 1 pinch Sea Salt
- 1 sprinkle Chinese 5 Spice Powder
- 1 whole Onion peeled and chopped
- 2 cloves Garlic peeled and chopped
- 1 inch size piece Fresh Ginger peeled and chopped
- 1 small handful Green Beans topped, tailed and chopped into chunks
- 1/2 Courgette chopped finely
- 1/2 Red Pepper chopped finely
- 1 small handful Frozen Peas
- 1 small handful Frozen Sweetcorn
- 2 tsp Lighyt Soy Sauce plus extra for serving
- 1 bunch Spring Onions chopped finely
- 1 whole Chilli optional - chopped finely if using
- 75 grams Noodles egg or rice noodles are fine
- 1 Litre Chicken Stock
Instructions
- Heat the oven to 180c, and cook the chicken drumsticks and thighs (sprinkled with salt and chinese 5 spice powder) for approx 30 minutes, until cooked through (check by piercing and ensuring the juices run clear). Once cooked, set aside to cool. I take the skin off, so it is the meat only in the soup - the children love to eat the crispy skin as it is!! :)
- Gently fry your onion, garlic and ginger in a large pot, then add the other vegetables (reserving half of the spring onion and the chilli if you are using it) and stir well, before adding the stock. Now add the soy sauce too, and bring to a simmer.
- Once cooled, pick the meat from the chicken bones, and add to the pot, along with the noodles, cook for another 5 minutes, until the noodles are soft, then add the spring onion and chilli if you are using it. Check for seasoning, and serve with an extra drizzle of soy sauce. Yum!
