Easy and Quick Puttanesca Sauce

A really simple and quick dinner time classic. Easy to rustle up with a few cupboard staples, and cheap too.

  1. Heat your oil gently, and peel your garlic cloves – no need to chop. Fry them gently pushing them against the side of the pan and turning them until they are soft. They should not discolour. Then remove the garlic, mush with a fork and set aside.
  2. Now add your onions to the pan, and your herbs, allow to cook until soft. Then add your tomatoes, and return the garlic to the pot too, and add your chilli, anchovies, olives and capers.
  3. Allow everything to simmer gently for about 10-15 mins,, add the basil for the last 5 mins. Then add to your cooked pasta, and sprinkle with some grated parmesan. Lovely!
