This is such a simple and easy dish, but is delicious and easily special enough to dish up for guests.

  1. Heat your olive oil in a heavy based pan, then gently fry your onions, garlic, thyme and bay leaf. Put a lid on (helps keep the moisture in) and cook gently for about 10 mins. The slower and more gently you cook them the better, stir occasionally so they don't stick and burn.
  2. Now take the lid off, turn up the heat to add some colour to the onions, add the stock and cook for a further 20 mins. Seasom to taste and serve with some grated gruyere! Yum!!!

    If you want to make this a bit more fancy, serve with slices of baguette and gruyere. Drizzle the sliced bread with olive oil, sprinkle with grated gruyere and bake in the oven for a few minutes until crisp and golden. Looks and tastes lovely!
