Crisp yet moist cake, perfect with a cup of tea



  1. Preheat oven to 180oc/350oF/ gas mark 4. Grease and line a loaf tin.
  2. Place the dates, bicarbonate of soda and lemon rind in a bowl and add hot tea. Leave to soak for 10 minutes until softened.
  3. Beat the butter and sugar together until light and fluffy, then beat in the egg. Stir in the date mixture.
  4. Fold in the flour using a large spoon, then fold in walnuts. Spoon mixture into prepared tin and place in the oven.
  5. Bake for 35-40 minutes ,or until risen and golden brown. Cool for 10 minutes on a wire rack. ENJOY :-)
