Really simple and tasty homemade mushroom soup

  1. Gently fry your onion and garlic in a pot, on a low heat. After a few minutes add your sliced mushroom and a pinch of salt and pepper. Give it all a good mix, then add your veg stock. It should just cover the mushrooms ideally. Add a bay leaf too and let it all simmer gently for approx 20 mins. Now remove your bay leaf, taste for seasoning and adjust if necessary. Blend and serve with a swirl of cream. Gorgeous!
