Raspberries, cream, honey, whiskey and oats! So simple and easy, but perfect for any occasion.

  1. Toast the oats on a baking tray (medium heat) for a few minutes until they smell nutty and rich, it doesn't take long. Set side to cool, then grind down a bit in a mortar and pestle.
  2. Using half of the rasps, make a raspberry purée - crush half the fruit through a sieve, then sweeten this to taste with a little caster sugar. Whisk the double cream until just set, and stir in the honey and whisky, trying not to over-whip the cream. Taste the mix and add more of either if you feel the need.
  3. Stir in the oatmeal and whisk lightly until the mixture is just firm. Alternate layers of the cream with the remaining whole raspberries and purée in 4 serving dishes. Allow to chill slightly before eating.
