This is a lovely Silver Spoon recipe, and a great way to enjoy courgettes as a main meal. These are stuffed with delicious things and baked - really simple and really tasty!

  1. Preheat the oven to 200c, spray / brush an oven proof dish with oil. Scoop out the flesh from the courgettes and set aside, take care not to pierce the 'shells'. Chop the flesh and set aside.
  2. Now place the courgette 'shells' in the baking tray, skin side up and bake for 10 mins. Remove and set aside, and reduce the oven temp to 180c.
  3. Whilst the shells are baking, chop the anchovies, garlic, olives, parsley and basil, tomatoes then add to the chopped courgette flesh with 2 tbsp. of olive oil and season with salt and pepper - mix well.
  4. Spoon the mix into the courgette shells (turn them so they are skin side down on the baking tray) and sprinkle with the cheese. Now bake for 20 mins. Eat straight away! Gorgeous.
