Courgette and Chocolate Cake

This really is delicious, the courgette helps to keep it nice and moist. A great way to use up any courgettes. :)

  1. Heat the oven to 180c, grease and line a round baking tray. In a large bowl, mix the flour, cocoa powder, mixed spice, and a tsp of salt. Now in another bowl mix the oil, sugar, eggs, vanilla essence and grated courgette. Mix the dry into the wet mixture carefully and fold until combined. You could also add toasted hazelnuts at this stage if you fancy it (100-150 grams is ideal).
  2. Pour the mix into the baking tray and bake for about 40-50 mins. You can check it is ready with a skewer, it should come out clean from the middle. Cool in the tin for 10 mins, before turning out onto a wire rack to cool completely.
  3. Now for the icing - heat the cream in a pan, and then add the chocolate pieces (off the heat) stir in, until melted and smooth. Set aside in the fridge to cool then spread it over the cake as you wish. Enjoy!
