Perfect Comfort food on a chilly evening! I get loads of veg in mine and it gets demolished with all that lovely sauce!

  1. First of all, fry your onion, and garlic in a pot with a tbsp of oil for a few minutes, then add your other vegetables and fry on a low-medium heat for about 5 minutes. Now turn up the heat and add the mince, add more oil if it's too dry. Let the mince brown, then add the tomatoes, water, bay leaf and granules. Give it all a good stir and allow to simmer gently for at least half an hour. the longer you leave it the moretender the meat will be.
  2. Whilst the meat sauce is cooking peel and chop your potatoes and swede, and boil in salted water for approx 20 minutes. Drain your potatoes and swede, and mash with a splash if milk and butter. Also preheat your oven to about 180c.
  3. Once ready, transfer your sauce to a suitable ovenproof dish, then top with your mashed potato and swede. I like to sprinkle on a handful of grated cheese too. Serve with some pickled cabbage if you fancy - such great winter food!
