This is an easy and delicious cake for any occasion. It is moist and light, and you can make it look very impressive.

  1. Preheat the oven to 160c, grease and line 2 equal sized sandwich tins.
  2. Beat the sugar and butter in a bowl until fluffy, beat the eggs separately, then add them gradually to the butter and sugar. Add a tbsp of flour with each drop and mix thoroughly each time.
  3. Now add the remaining flour and baking powder, fold it in gently.
  4. Mix the coffee and water, then fold this in carefully. Now split the mixture between the two tins and bake for 30 mins until cooked through. Check with a skewer if it looks undercooked. Allow to cool before icing.
  5. For the icing Cream the butter and icing sugar, dissolve the coffee in boiling water and then add slowly to the butter and icing sugar mix. Whisk well, until smooth the set aside in the fridge to set a little.
  6. Spread the icing on the bottom of one of the cakes, and some jam on the bottom of the other. Put them together and then ice the top and decorate with walnuts - perfect!
