This is a great dish to make before Christmas Day if you have friends or family round but don't want to eat something heavy before the big day. Then again its great to have any time of year. Best served with potato salad (http://www.myingredients.com/recipes/homemade-potato-salad/) and samphire.

  1. Start by preparing a court bouillon a day in advance
  2. in a large pan add all the ingredients, except the salmon, cover with cold water, then bring to the boil then simmer for 20 minutes
  3. Remove from the heat and let this mixture cool in the pan. take out the lemon but keep the rest as is and store in the fridge overnight to let the flavours properly infuse.
  4. Next day strain the liquid through a sieve to remove the veg, herbs and spices.
  5. Now place the salmon in a suitably sized pan, I would recommend a fish kettle if you have one, then cover with the strained liquid, put the lid on and bring to the boil. Once your liquid has boiled turn off the heat and leave the salmon in there until the liquid has cooled. Now serve with potato salad and samphire.
