Chopped Up Egg in a Cup

Top class simple brekky from Glasgow. Also known as "Egg chopped up in a cup" and simply "Egg in a cup". Best served with buttered toast cut in to strips "soldiers"

  1. Place egg in small pan and cover with water. bring to the boil then reduce to simmer for 3 mins.
  2. Remove egg from water and cool under a cold water tap. crack the egg open and scoop into a cup. Add butter and season, then chop with a spoon. Serve with the buttered soldiers for best results
