  1. Place the dried fruits and mixed peel with the rum and zest of one orange into a pan. Bring to boil and then cover and leave for 24 hours.
  2. Preheat oven to 150oc.
  3. Grease and line one 8in cake tin.
  4. Place sugar and butter in large bowl and beat until fluffy.
  5. Add the eggs one at a time, then add the flour.
  6. Gently add the soaked fruit and fold into the mixture.
  7. Add spices into the bowl and mix.
  8. Pour into baking cake tin and bake for a minimum of three hours.
  9. The cake will be ready when you can insert a skewer into the cake and it comes out clean.
  10. When cool pour some rum over the mixture and then wrap in clingfilm. Keep in a cool place.
  11. Continue to 'feed' the cake with rum once every two weeks until ready to eat. The cake will keep for up to three months.

    These look lovely decorated too. Easy to do if you heat a little apricot jam in a saucepan, and glaze the cakes. then you can stick on flaked almonds, cherries or whatever you fancy. Gorgeous!
