Quick, easy, cheap & tasty. Make sure you get the rice cooking during the last 15 minutes of your pork cooking time.

  1. On a roasting tray with a rack, place the pork and pierce it several times. Pour over a kettle of boiling water then pat dry with a kitchen towel. Mix the spices and salt and rub all over the pork. Put aside for an hour.
  2. Preheat your oven at 220oC. Drain the roasting tin then place in your oven and roast for 10 minutes. Lower to 180oC and cook for 30 minutes more until juices run clear and the skin is crunchy.
  3. Bring a pan of 350ml water to the boil add the rice and cover and cook for 15 minutes. Drain and set aside
  4. In a shallow dish mix the soy sauce, chili oil and vinegar. Place the ccoked pork crackling side up in this sauce and leave for a couple of minutes.
  5. Toast the sesame seeds in a pan and stir into the cooked rice. Slice the pork and serve with the rice, drizzle over the rest of the oil and sprinkle with the chopped coriander
